Saignant au Poivre was born out of my lifelong passion for crafting exceptional steaks and creating unforgettable dining experiences. Founded in 2003, the restaurant is a culmination of years spent honing my craft as a sous chef in some of Belgium’s most prestigious Michelin-starred kitchens, where I had the privilege to learn from culinary legends and master the art of balancing bold flavours with refined techniques.

Inspired by those formative years, I set out to create a place that celebrated the timeless elegance of steak—perfectly cooked, thoughtfully seasoned, and served with soul. At Saignant au Poivre, every dish tells a story, paying homage to classic French culinary traditions while infusing them with my own creative touch.
